Quick Parmesan Spinach

Makes 6 servings

2 garlic cloves – pressed
2 teaspoons olive oil
3 (10-ounce) packages fresh spinach
¼ teaspoon salt
¼ teaspoon ground red pepper
1 tablespoon fresh lemon juice
5 tablespoons freshly grated Parmesan cheese


Saute garlic in hot oil in a large skillet coated with cooking spray over medium-high heat for 1 minute. Add spinach, 1 handful at a time, and sauté just until spinach begins to wilt. Add salt, red pepper, and lemon juice, gently tossing to coat. Remove from heat, and sprinkle evenly with Parmesan.
