Tomato & Arugula Salad

7 cups Classic Salads baby Arugula
8 Classic Salads Heirloom Tomatoes, thickly sliced, ends discarded
2 Whole pieces fresh Mozzarella
Balsamic Dressing
Coarse Salt
Fresh cracked pepper


Gently wash and dry the baby Arugula. Toss lightly with balsamic dressing—just enough for a thin coat—and arrange on a platter. Arrange layers of tomato and mozzarella, alternating the multi-colored heirloom tomatoes with the cheese, on top of the Arugula. Drizzle a thin layer of balsamic dressing on the tomatoes and mozzarella, and then sprinkle on coarse salt and fresh cracked pepper.

Serves six to eight. Be careful not to dribble tomato juice on your chin!
